True Paleo Diet confession time: sometimes I just get tired of vegetables, and I want to eat a big bowl of Lucky Charms. Like today for instance. I was tired, hadn’t been running in a week, and man, a bowl of sugary cereal with ice cold milk sounded pretty good.
But then I remembered it was Trader Joe’s Tuesday here at Chubby Mommy Running Club, so I opened the fridge and saw the bag of Kale just sitting there, lonely for attention. I’m pretty sure no one here at home ate Kale while I was off at BlogHer in San Diego this weekend.
So I heated up some olive oil, chopped up a bit of onion, red pepper and mushrooms, and added the kale. After about 30 seconds, when the kale got a little wilty, I poured a beaten egg over the top, sprinkled on some salt and pepper, and voila.
Even the dog was all in. But she’ll eat anything. Even Lucky Charms!
Then I worked for three hours, and got up and went out for a 7 mile run. I ate a Gu at 3.5 miles to give me a little boost, and coasted all the way home.
Boom. Felt much better.
I’m pretty sure NOT eating the Lucky Charms was the right decision here.
